Use the flavor profile as a quick impression of the matcha. Aroma, umami, bitterness and color help you compare whether a matcha is better suited to hot water, latte or recipes. The final taste depends on dosage, water temperature, preparation and ingredients such as milk, sugar, cream or batter.

Hibiki is a stronger Japanese matcha for latte and Iced Matcha. The taste is more present than with softer latte matchas, so it holds up well in milk, ice and lightly sweetened drinks. Choose Hibiki when you want a Matcha Latte in which you keep tasting the matcha clearly.
Hibiki has a clear, firm matcha taste. That works well in Iced Matcha, vanilla matcha and latte with milk or plant-based milk, because the taste does not fade quickly. With hot water only, you will notice more bitterness than with a soft premium matcha, so Hibiki comes into its own mainly in creamy or cold preparations.
Hibiki mentions Shizuoka, Kagoshima and Miyazaki as Japanese tea regions, with 1st and 2nd flush as harvest and Saemidori as cultivar. Saemidori is often known for a soft, green impression, but with Hibiki the choice mainly comes down to use: this matcha is meant to stay clearly present in milk, ice and creamy drinks.
Hibiki fits you if you want a full Matcha Latte where the matcha taste remains clearly present. Use it with milk, plant-based milk, ice or a little sweetness when you want to make a richer, more pronounced matcha drink.
Whisk Hibiki smooth first with a small amount of hot water at about 70 to 80 degrees Celsius. Then add milk, plant-based milk or ice for a full Matcha Latte or Iced Matcha. If you want to soften the taste, you can add a small amount of sweetness.
Hibiki is a good choice if you like your Matcha Latte full and clear. In milk, ice or a lightly sweetened drink, the matcha taste stays recognizable, so your drink is not only creamy but also really tastes like matcha.
Hibiki fits you if you mainly make Matcha Latte, Iced Matcha or creamy matcha drinks and want to keep tasting the matcha clearly. If you are looking for a soft matcha to drink with hot water only, a more refined drinking matcha is the better choice.
